HARVEST: Manual in boxes followed by selection of the bunches on a first sorting table and selection of the berries after destemming.
VINIFICATION: Destemming, partial crushing, placing stainless steal tank for fermentation at a low controlled temperature and maceration for about 18 days.
AGING: 6 months in French tonneaux of second and third passage followed by minimum 6 months in bottle.
