HARVEST: Manual harvest in boxes followed by selection of the bunches on a first sorting table and selection of the berries after destemming. Separated harvest for the 3 varieties;

VINIFICATION: Destemming, partial crushing, placing in separated stainless steal tanks for fermentation at a low controlled temperature and maceration for about 18 days.

AGING: In tonneaux and barrique 12 months followed by at least 6 months in cement once the blend has been made. Minimum 6 months stay in bottle
